Mutton, Pork or Beef Pickle (Prasanna Aunty's)

This one brings back memories of school - a staple snack when we go back from school was bread and meat pickle - mouthwatering. I used to take this back to NID with me when I went back after the summer holidays - and the max it would last would be about 2 days.

This recipe is an Aunt's version (Prasanna Aunty, my father's cousin in Chennai).



Ingredients:
  • 1 kg meat
  • 200 gms garlic
  • 100 gmas ginger
  • 50 gms Methi powder
  • 50 gms mustard powder
  • 100 gms green chilli
  • 1 tsp heing
  • Vinegar 1 1/2/ cups (use little at a time)
  • Oil 1cup (Sunola or Til)
  • Curry Leaves
  • Salt
  • Garam Masala - cardamom, cloves, cinnamon,
  • Chilli powder 1 cup or less
  • Pepper 1 tsp
Instructions:
  1. Clean, wash and cut meat
  2. Add ginger, garlic, green chilli, vinegar and cook
  3. Fry in oil
  4. Fry separately green chilli, ginger, garlic, curry leaves
  5. Remove from heat and add chilli, mustard, methi
  6. Return to fire and add vinegar, fried meat and cook well
  7. Add salt, pepper and crushed garam masala
  8. When cooked, taste for seasoning
  9. Remove from fire, add heing
  10. Cool and bottle
