Tried this out today - fresh red snapper fillets marinated with coriander chutney and cooked on a charcoal grill. Fresh flavor and juicy, good with rice or with a light tangy salad.

- 1/2 kg Snapper Filets (cut into 2 inch slabs)
- Coriander leaves - 1 cup
- Garlic cloves - 6
- Ginger Paste - 1 dst sp
- Green Chillies - 1 or 2
- Salt to taste
- Garam Masala - 1/2 tsp
- Yogurt/Curds - 1 tbsp
- Lime - 1/2
INSTRUCTIONS:
- Make a paste of the coriander, garlic, ginger and green chillies
- Add the juice of 1/2 lime to it
- Mix the fish pieces into the marinade - gently. Each piece should be well coated
- Let the fish marinade for an hour or so in the fridge (or 15 ins outside)
- Fire up the grill
- Cook the fish about 4 mins a side, turn over only once. if then, reduce this time. And keep the fish about 10 cms or more away from the heat
