Grilled Snapper in green chutney

Tried this out today - fresh red snapper fillets marinated with coriander chutney and cooked on a charcoal grill. Fresh flavor and juicy, good with rice or with a light tangy salad.


INGREDIENTS:
  • 1/2 kg Snapper Filets (cut into 2 inch slabs)
  • Coriander leaves - 1 cup 
  • Garlic cloves - 6
  • Ginger Paste - 1 dst sp
  • Green Chillies - 1 or 2
  • Salt to taste
  • Garam Masala - 1/2 tsp
  • Yogurt/Curds - 1 tbsp
  • Lime - 1/2

INSTRUCTIONS:

  1. Make a paste of the coriander, garlic, ginger and green chillies
  2. Add the juice of 1/2 lime to it
  3. Mix the fish pieces into the marinade - gently. Each piece should be well coated
  4. Let the fish marinade for an hour or so in the fridge (or 15 ins outside)
  5. Fire up the grill 
  6. Cook the fish about 4 mins a side, turn over only once. if then, reduce this time. And keep the fish about 10 cms or more away from the heat
