This is a dry dish which goes well with a simple yellow dal and rice or hot phulkas.

- 2-3 large potatoes
- 1/2 inch ginger root
- 1 green chilly
- 1 tbsp oil
- 2 small/medium tomatoes
- Large pinch of hing (asafoetida)
- Jeera powder
- Dhania powder
- Jeera seeds
- Oil
- Salt
Instructions:
- Peel and dice potatoes
- Chop ginger fine, slice green chillies and finely chop tomatoes
- In hot oil, put a tiny piece of hing (about size of a pea), and 1/2 tsp jeera seeds
- Then add ginger, green chillies and tomatoes and fry
- Add 1 tbsp jeera powder, 1/2 tsp haldi and salt to taste
- Put in the potatoes and mix well
- Cover and cook on slow fire till dry
- Sprinkle more jeera powder and 1 tbsp dhania powder and keep stirring till well coated and dry
